This recipe is like the same one used by vendors at our fair.

"White sugar makes the Kettle Corn taste like popcorn balls. Use brown sugar and it will taste like caramel corn." INGREDIENTS: 1/2 cup unpopped popcorn kernels 1/4 cup white sugar 1/4 cup vegetable oil
DIRECTIONS: 1. Place the popcorn and sugar in a large pot with vegetable oil. Over a medium heat, begin to pop the popcorn. Constantly shake the pot to ensure that the popcorn kernels and oil do not burn. Once the popping has slowed, remove the pot from heat. Hmmm, doesn't the sugar scorch in the pan? Seems like it could be tough to clean up afterward.

Well I haven't made it but I've watched the people make it and talked to them about it. One family uses big stainless steel round bottom kettles, almost like old fashioned wash pots. They constantly stir the mixture with a big wooden paddle, it never sticks to the bottom of the pot. However the pot is hot when they start cooking. Maybe that makes a difference. I think that a crank popper might work. I've seen them at several stores marked down after Christmas. It might be fun to try

I have made this recipe; I got a craving for kettle corn a few weeks ago and found the same recipe with a search engine. Being a big Alton Brown fan, I use a large stainless steel mixing bowl I got from Walmart as a popcorn popper. For a lid, he recommends foil that you have pierced several times with a fork. That works fine for regular popcorn, but I found that for kettle corn you need to bring the oil up to popping temp first and once you open the foil it's hard to seal again. I now use a pizza pan for a lid, and it's good that it isn't tight-fitting as the steam needs to escape.
Here's how I make it - Put oil and salt and two kernels of corn in the bowl, cover with pizza pan. (use two pot holders to hang onto bowl and lid and shake.)
When your test kernels have popped, dump sugar and popcorn into hot oil, cover, and shake over flame. Seems like it takes about two minutes, but in any case, keep the popcorn moving until you hear no more popping. Quickly dump into serving bowl.
The first time I made it, the 1/4 cup sugar seemed too much - the popcorn had plenty on it and there was a big glob of sugar still in the bowl. I've been experimenting with using less sugar, I think the last time I used about 2 Tablespoons and it seemed about right.
Cleanup isn't as bad as you might think, the sugar doesn't scorch - it will dissolve in hot water. I do use Dawn or a good grease cutting dish soap, as the oil is everywhere in the bowl and pan, and it gets sticky if you wait til the next morning to clean it up (I use canola oil, if that makes any difference.)
Anyhow, that's my experience with it. I don't like the microwave stuff, it reeks of chemicals ;P

Wellllll...... you could come and visit ME after going to Bass Pro! Actually, I'm not sure how *lucky* we are to have a Bass Pro that close (it's about 50 miles from the house) as it is WAY too easy to spend WAY too much money in there.

One is being built in Independence, MO. I'm not sure when it is to open though.
