I used Wildfire's turkey recipe on a whole chicken. I cooked it in cast iron with a self-basting lid at 200. It came out really good! I have a cutting board that goes over the sink with a silicon colander in it. I dumped the hot chicken in it so it could drain and cut off a few pieces for dinner. It sure seemed to minimize the mess.

Wait....
Tell me you had a pan underneath to catch the juices!
At my house, the drippings and the bones go back in a pot with herbs and water and become chicken stock.
I'm thinking your colander sounds interesting, though!

I had used applesauce instead of an apple inside the chicken--since I didn't want to drive to town for an apple. It was a littlle messy, but the chicken was great.
