I have found my best canning tomato. It is "Super Sauce" www.burpee.com/vegetables/tomatoes/paste/tomato-supersauce-hybrid-prod003154.html
This is a well-mannered tomato that doesn't spread all over. If it hadn't been for that super hot weather, I think all the tomatoes would be ready about the same time. Mine measure 4-5 inches long and are perfectly smooth--easy to slip the skins. No cracking or indentations or irregularities to make them harder to process. Next yeat, ALL my canning tomatoes will be Super Sauce. Too bad it isn't an heirloom, but I guess sometimes you can't have everything. I have Matinas to fill that position. I brought these in finish ripening for a couple of days because we are expecting rain.
