I have found a super easy way to male egg mcmuffin like sandwiches.
Put an egg in a coffee mug.
Sprinkle a handful of shredded cheese in mug with egg.
Stir well.
Place mug into microwave for 30-50 seconds. This depends on your microwave strength. You will have a nice fluffy egg to put in between toast, English muffins, or bagels. Can add other "omelet" ingredients before stirring.
I have one almost everyday. Love them!
