My raspberry bushes are producing way to many berries to eat this year. I have given away quart after quart of them. I don't like to freeze them since I end up tossing them cuz I don't use them, so thought I may make some jam/ jelly. Does anyone have a good recipe that's easy for a beginner?

Look at the next post down---it doesn't get any easier than that.
Freeze the raspberries one-deep on a cookie sheet. Dump into a ziplock freezer bag. You will be able to pour out as many individual raspberries all winter as you want. No more big lumps of frozen raspberries.

I like to use Pomona's pectin. That way you can adjust it any way you choose, use sweeteners such as honey or stevia, add other fruits, use less sweetener or none at all.
I had a fruit smoothie this morning for breakfast made with a cup of milk a raw egg, a bit of sugar, a drip or two of vanilla, and about a cup and a half of frozen raspberries. It was like soft raspberry sherbet, with an extremely intense raspberry flavor. It keeps me going all morning.

Where do you get that pectin? Note the post below that you can make jam with just fruit and Chia seeds.

Silly question---Amazon is the place. There is also a cookbook for jams and jellies that uses only Pomona's pectin.

Before you buy the cookbook, the instructions that come with the pectin show you how you can make your own variations. As a result, the cookbook might not be at all necessary.
I've gotten it from Amazon, as well as Whole Foods. Do you have those where you live?

I don't think there is a Whole Foods within 400 miles or so. Amazon is my friend. It is as close as my mailbox. These is a store that probably has it in Spokane. It is about an hour and a half up to that store. I just don't drive around looking for stuff anymore. If they don't have it locally, then I go directly to Amazon. I am not sure that anyone understands, or cares, what the higher gas prices have done to our ability to shop brick and mortar stores.
The reviews on Amazon for both products are excellent. Thank you for mentioning that there WAS another pectin.

You were right. The book is overkill for those who already do this kind of thing. Luckily, I have the perfect newly-wed to pass it on to with a box of pectin.
