I tried a jar of freshly-canned potatoes. I dumped them in a fry pan with same small chunks.of bacon and added some pepper and some cheese. Some of the potatoes were like mashed, but mostly small, soft chunks. It was absolutely delicious. Sure, I could have.done the same thing starting with fresh potatoes, but this was FAST. And, I know what went into my jars. I am thinking I may make 16 more pints of canned potatoes. You don't have to add much to make a healthy meal. I don't think I would try to make a potato salad or anything out of the canned potatoes--but I suppose I could have. However, that kind of does away with the idea and concept of a potato being healthy.
This way, I know I won't worry about my potatoes not making it in storage. I am going to order some sage to store with them through herbalcom.com. And, I absolutely love my wooden harvest rack.

Linda, if you're not likely to need the sage for other purposes, let me send you some branches of fresh sage. You can throw some in with your taters, and if you want to dry some for your chicken soup, you can do that.
Let me know if that would work for you. I have a nice crop this year.

Hey Linda, I was late getting the sage out. It left Saturday. I beat it to the post office five minutes before they closed, or it might not have gone out until tomorrow. DH got sick last week and required a transfusion, and I got sick with something else. My server crashed a week ago Saturday and didn't come back on for almost a week. It wasn't much fun. Today the farrier and the vet are coming. Temperance gets her big girl shots and an inspection of her belly button. She appears to have a small umbilical hernia, so I'm going to see how crabby Doc looks when he inspects it. She's so lovely for the farrier. Last time, when she held up all four legs flawlessly and let him work, the farrier said softly, "This is my favorite one. She's the best of the year." Which, you know how babies are. I probably just jinxed it. Sorry I was late with the sage, but it'll be there shortly.

I will appreciate the sage, whenever it gets here. You had a busy, and challenging week to deal with. Hubby is supposed to be on sabbatical, not sick. I hope he feels lots better now.
That is great news about your filly. Hopefully, we will see a picture soon.
