We are now following the gluten free (or as close to it) diet as we can....I'm starting to get good at bread products that are low gluten. I AM using Spelt, since it's not a GMO type wheat, to help with bread rising. That's the biggest issue.
It's simply amazing how many prodcuts you never think would have wheat in them DO...
Celiac sufferers really have it tough both in stores and restaurants to stay safe with their eating.
I think everyone should try two weeks without wheat (the rice pasta is pretty decent, folks!) and report back on any health improvements.
My DH seriously lost his 'buddha belly' and probably 20 lbs. by following this. And he does NOT exercise...

I learned a lot about gluten free diets when our Newfoundland Wrigley was diagnosed with gluten allergies. There is a restaurant near us that says they can do any of their items gluten free.

The gluten free goods at Walmart are so expensive. Usually it is a bread or dessert item and I wont buy that anyway. I AM going to try to start baking bread next summer with non GMO wheat. At least I think it is non GMO I talk to another lady online and she is now following a gluten free diet. No soda pop either. Has been for 4 months and has lost 15 pounds. She says she has a lot more energy. If it wasn't God made she doesnt eat it. She also says she is not tempted by the other foods now.

I like bread too much. Id fail at gluten free unless I had to for health reasons.

They do make gluten free bread. And the pie crusts, and cakes oh and don't get me started on the cookies...melt in your mouth. Most of the breads are VERY dry. But toast up nicely. Kerry is gluten intolerant.

I really think C has a problem with gluten. I should keep that in mind now that I'm starting to cook again!

I have a pretty decent low gluten bread recipe (after MUCH trial and error). It uses spelt, so not for confirmed Celiacs, but for those wanting to ditch the GMO ruined wheat we all normally eat. If anyone wants it let me know.
