Can you please share your knowledge for dehydrating fruits and vegetables?
Also how to store them.

I mostly dehydrate tomatoes and cherries. The other fruits I've dehydrated weren't anyone's favorites so were a waste of time and effort. I just cut them and dehydrate them--not rock hard, leave them flexible. Then I put them in small bags and then in a freezer bag and store them in the freezer. They stay good 2-3 years, maybe longer.
Simple prep--nothing special. I let the freezer take care of not letting anything "grow".
