Brought this to the most recent Dr. Dan day and MA requested I post it. You can tell I have a real sweet tooth. This would be good at a fancy party.
1 pkg (8 oz) cream cheese, softened 1/2 C butter softened 1/4 tsp vanilla extract 3/4 C powdered sugar 2 T brown sugar 3/4 C miniature semi-sweet chocolate chips
3/4 C finely chopped pecans 1/4 C miniature semi-sweet chocolate chips
Graham crackers or graham cracker sticks
Beat cream cheese, butter, and vanilla together until fluffy. Gradually add sugars, beat just until combined. Stir in 3/4 C chocolate chips. Cover and refrigerate at least 2 hours. Place cream cheese mixture on large piece of plastic wrap and shape into a ball. Refrigerate at least 1 hour. Just before serving, mix pecans and 1/4 C chocolate chips together. Roll cheese ball in mixture. Serve with graham crackers.
The only graham cracker sticks I could find at the store were Scooby Doo ones shaped like bones, but they tasted great! LOL

This stuff is GOOD. And slap me silly if it ain't the truth. The Scooby snacks were great with it! They're sturdy enough to do a little dipping, and the crowd was a bunch of animal nuts. And oh lawsy yes, it was finger lickin' good.

hmmm... how 'set' does this get? I'm thinkin' why couldn't one put it in a graham cracker pie crust and have pie! Sounds delish.

I think you would have a hard time spreading it onto the crust, it is gooey and rich.

Bummer... then I'd have to eat my messed up choco/cheese/graham stuff to get rid of the evidence of my mistake! ;D

I must say - I made this yesterday - and it is absolutely SINFUL! And - if you're going to be a little piggy like me - you don't even have to roll it in a ball - just sprinkle the nuts on top of it in the bowl that it's in! Chocolate Teddy Grahams and Chocolate Chip Teddy Grahams go very well with it!
