And point friendly! It serves 8 and each serving is 3 points. I like to serve this with rice and chicken.
Multi-Veggie Crustless Quiche
2 c cooked sweet potato 1 c steamed spinach, chopped 1 large tomato, sliced 1 c chopped onion 1-2 cloves of garlic 1 egg 1 c low fat cheddar cheese, shredded 1/2 c fat free milk 1/4 c self-rising flour salt pepper cooking spray
Preheat oven to 350F. Spray a pie plate with the cooking spray. Saute the onions and garlic with some of the cooking spray, cook until soft. In a large bowl, combine the spinach, potatoes, onions, and garlic, sprinke with salt and pepper. In another bowl whisk together the egg, milk, and flour, add the cheese. Add to the veggie mixture, blend well. Pour into the pie pan. Arrange the tomato slices on the top. Bake for 35-45 min or until the center is set or a knife comes out clean. Sprinkle with the remaining 1/2 c cheese and put back in the oven till melted.
