twoponies, MA, I have a little pita problem maybe you can help with. Not your recipe, the one I made last week.
OK, the pitas puffed up like they should, I saw it. Then I stacked & wrapped in a towel to cool as recommended. Then I placed some in the freezer.
Well, when thawed and reheated - the pockets had *healed* up, LOL! This could only happen to me! I guess I could remane them *Oral Roberts* pitas!
Do you have any words of wisdom for me so my pita puffs don't heal in the freezer??? I have to freeze some as we can't eat them fast enough if left out.

Can you slit them and put a piece of waxed paper inside before freezing?

I like Linda's idea. I would also make sure they were completely cooled before you put them in the freezer. I would also not stack them up and just cover them with a light towel.

Linda, yes, I bet that would work. I was trying to keep them whole, but there's no real reason to. I cut them as soon as they're thawed anyway.
Twoponies, that is probably a good idea too. Mine said to stack but yours doesn't. will they still un-puff for storage if cooled as you suggest?
