oz's Pineapple Upside-down Mug Cake
topping: 3 Tablespoons brown sugar 1 teaspoon pineapple juice 4 walnut halves 1 pineapple ring (or some segments or crushed) 1 marischino cherry cake: 6 Tablespoons flour 2 Tablespoons sugar 1 large egg 1/8 teaspoon vanilla extract 2 Tablespoons butter (softened or melted) 2 Tablespoons pineapple juice
Assemble the topping in the mug by mixing the brown sugar and pineapple juice and spreading it in the bottom of the mug. Place the walnut halves at the four points of the mug.
Place the pineapple in the mug and put the cherry in the center. Place in the microwave and nuke for 1 1/2 minutes (1000W). In a separate container mix the flour, sugar, egg, vanilla, butter and pineapple juice until completely blended.
Carefully pour the cake batter into the mug with the topping. Place in the microwave and nuke for 4 minutes (1000W).

Oh yum! I won't be trying this any time soon. I imagine it is really high in points! LOL My dad loved pineapple upside down cake. It's a good thing he didn't have access to an easy recipe like this. He would have lost all self control!

I gotta ask - do you eat it out of the mug or turn it over on a plate?
I envisioned eating the first one out of the mug but now I don't know...

Now, this one I think you would want to turn out just so you get the proper effect. I'm def. going to try it but don't have all the ingreds. right now.
The chocolate one can be eaten either way. I turned it out in a cereal bowl and it stood up just like the mug, lol! I cut it in half and it made 2 muffin size servings. It cooled quicker that way so I could dig in quicker.
