Sunflower Seed Cookies
1/3 cup water 1/3 cup shortening or butter (I use Smart Balance) 1/3 cup canola oil 2/3 cup brown sugar 2/3 cup white sugar 2 eggs 1 tsp vanilla
2 cups whole wheat flour 1/2 cup wheat germ 1 tsp salt 3 cups (or more) of old-fashioned oatmeal 1 cup of unsalted, raw sunflower seeds
Cream the first five ingredients. Then beat in the eggs and vanilla. Stir in all ingredients except the sunflower seeds. At them once the other ingredients are well-mixed.
Refrigerate for 2 or more hours. Roll into balls about the size of walnuts. Put the dough on an ungreased pan and flatten slightly (they won't change shape much as they cook.) Bake at 350 degrees for about 10 minutes. Do not overbake. Makes about 3 dozen.
Hint--the dough will really stick to your hands. Keep your hands clean and wet to solve that problem. The cookie dough is very easy to roll with wet hands.

Those do sound yummeh... Linda, you have such a variety of recipes. I can't remember if I've asked this here before, but my mother used to make 'breakfast' cookies. They had sunflower seeds, chunks of cheese, and bacon. They were more salty than sweet. They sound weird, but they were GOOD. Have you seen a recipe like that? I've searched and searched and come up empty every time.

Oh, those do sound good! I'll have to figure out the points. Thanks, Linda! T-leigh, your breakfast cookies remind me of some chocolate Heather got and made me try. It was dark chocolate laced with bacon. It was smoky and sweet, and downright good! (But don't tell her I said that.... )

PREP TIME 10 Min COOK TIME 15 Min READY IN 25 Min
INGREDIENTS 1/2 cup butter, softened 3/4 cup sugar 1 egg 1 cup all-purpose flour 1/4 teaspoon baking soda 10 bacon strips, cooked and crumbled 2 cups cornflakes 1/2 cup raisins
DIRECTIONS In a mixing bowl, cream butter and sugar. Beat in egg. Add flour and baking soda; mix well. Stir in bacon, cornflakes and raisins. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 15-18 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. Store in the refrigerator.

Since that oatmeal is just about raw, it isn't going to be very digestible. Thus, it will provide lots of fiber, but not much for calories..... But, since I love oats right out of the sack, it suits me just fine LOL.
There probably isn't any reason you couldn't put bacon and chunks of cheese into these cookies. Your basic "dough" recipe doesn't vary that much from cookie to cookie.

I've tried that on regular cookies, but the ones my mother made weren't sweet in any way... almost like a cookie consistency biscuit, with cheese, bacon, seeds... phooey!! Doomed to wander the earth searching for an elusive recipe!
