I'm about to get busy and start making some vegetable beef soup.
Who has some favorite soup recipes they'd like to share?
I'd love to try something different.

I just use stew meat and potatoes - not much of a veggie eater - but my mom always used baby carrots.
Use 1 can of beef broth or water and a couple cubes of beef boullion, season with salt, pepper, onion powder, garlic powder, a little paprika, celery seed, a little poultry seasoning, and 2 or 3 bay leaves. Add enough water to just cover all ingredients.
I also usually add a packet of gravy mix - makes it just a little thicker.
And it's always better the 2nd day!

Isn't that one of the interesting quirks about good soup? It's always better the second day! I got a great split pea and potato soup from The Tao of Cooking many, many years ago. You saute a chopped onion in a little olive oil, then throw in some garlic to get it all perfumey. Then a cup of dried split peas, a couple of big chopped up potatoes (I leave on the peels, I just like them and the fiber's good for you) and then throw in a quart of chicken stock. (That's not Tao; The Tao was a vegetarian restaurant, but I don't often make veggie stock, just meat stocks.) Then it simmers about 45 minutes to an hour or more, and I add a couple of good grinds of black pepper and salt to taste. I like to squish the taters around a little bit to make it thicker. Then before serving I add about a half cup of grated parmesan (good stuff, not that sawdust in the green can) and serve. Omigosh, it's rich and wonderful and keeps you warm inside for hours!!! For variety, sometimes I add a half pint of sour cream right before serving (low fat's okay, if you can get the kind that doesn't have a lot of creepy stuff in it), or top with chopped fresh onion. A big bowl of that with some crusty bread, and a nice cup of fresh fruit, and I'm a happy camper! More soups I love are thick bean soup, beef burgundy (yeah I can make it a soup, and it's heaven, full of mushrooms and onions), chicken and rice is always nice , chili, chicken/beef/turkey and noodles, tomato, etc. I like homemade soups; there's a comfort thing about having them on the stove or in the crockpot. But that's probably because I love to cook. Jane, your soup sounds delicious! How long do you like to let it simmer?

I'm also a soup lover. I have been simmering soup bones most of the day to make beef vegetable soup, tomorrow. I use the meat and broth from the soup bones, skim the fat, and add a couple of beef bouillon cubes. Then I add stewed tomatoes, potatoes, onions, celery, carrots, and corn. Bay leaves, marjoram, thyme, and pepper to season. It will be great all week long.

Usually I put the meat in with the seasonings, beef broth and gravy and set on high for about 3 hours - then add the potatoes and keep on high until they are done - probably about another 3 hours, then put on low for a couple hours, then eat a couple bowls and put the rest in the 'fridge and eat all week!
