Kentucky Derby Pie 1 stick butter 1 cup sugar 2 eggs, beaten 1/2 cup flour pinch of salt 2 T. Kentucky Bourbon or 1 tsp. vanilla 1 cup chocolate chips 1 cup chopped pecans 1 9 inch pie shell, partially baked
Preheat oven to 350 degrees.
Cream butter and sugar. Add beaten eggs, flour, salt and Kentucky Bourbon (or vanilla) Add chocolate chips, and nuts. Stir well. Pour into partially baked pie shell and bake for 30 minutes, or until center is set.
Serve with whipped cream or vanilla ice cream.

I have made this several times (without the bourbon) - it is to die for! Make sure you warm it up in the microwave before adding the whip cream or ice cream!!

I got a recipe very similar to this several decades ago from the Louisville Courier-Journal at Kentucky Derby time, and it was called Mr and Mrs Harry Bingham's Winner's Circle Pie. We always called it Derby Pie. I'm telling you, it tastes like a giant warm chocolate chip cookie. It's so good it will hurt!

Looks good... but the one I pulled off the net has way more booze... I REALLY like booze desserts, it's my only weakness (LMAO!!!)...

Follow the directions, but up the Kentucky Bourbon to a quart and reduce the cooking time. Then instead of a fork: use a staw!
