There are lots of fruited rice recipes on the internet, some work well for me and others don't. I don't always make it the same way, here are a couple of possibilities.
Recipe 1
I like this because it has a nice balance of slightly sweet (from the fruit) and a little salt (from the package) and is a pretty yellow.
I start with a packet (eek!) of "Vigo" Saffron Yellow Rice. It's a Spanish rice mix complete with rice and seasonings. I add about 3/4 of a cup of dried fruit. Depending on what I have, I mix currants, yellow raisins, regular raisins, dried cranberries, dried plums (or prunes). I give them a rough chop and mix through the dry rice mix. Add water and butter and cook according to package directions. I use my rice cooker and it's great - once it's cooked it switches to warming mode and will wait until the rest of dinner is ready.
Oh! I get this packet at the dollar store of all places! Although it's from Spain, my store has it in the Mexican Food section.
Recipe 2
2 C white rice
4 C liquid (I like 1 Cup Orange juice and 3 Cups water).
Salt and butter
3/4-1 Cup of chopped dried fruit. Depending on what I have on hand, I mix regular and yellow raisins, dried cranberries, dried plums (or prunes). (Fruit like apple or banana don't really work well.)
Mix the dry rice and chopped fruit, add butter, liquid and salt. If cooking in a rice cooker, just turn it on and let it cook. If cooking in a pot on the stove, bring just to boil (lid off). When it starts to boil, turn heat to low and close lid (leave just a crack for steam to escape.) Cook about 20 minutes. Turn off heat and let rest at least 10 minutes before serving (keep lid on.)
Both recipes - if you don't already know, don't stir once the cooking begins! Don't lift the lid and peek!
