If you do not wish to add the mushrooms and peppers, it is delicious just with the marinara sauce alone.
Serves 4
4 cube steak/ chicken breasts
1/4 cup olive oil
1 large green pepper and 1 large red pepper sliced and seeds removed
1 pound of mushrooms sliced
4 cups Marinara Sauce (Or simple spaghetti sauce)
1 cup of chicken or beef stock
salt & pepper to taste
1. Either on grill or in broiler, cook steaks/chicken breasts until rare.
2. While cook steaks/chicken breasts are cooking heat olive oil in a large saute pan over medium heat.
3. Add peppers, and mushrooms and saute for 2-3 minutes.
4. Drain oil and place steaks in pan season with salt and pepper.
5. Add marinara sauce and stock and simmer for 5-6 minutes.
6. Remove cook steaks/chicken breasts to serving plates, cook sauce for 2 more minutes to reduce then pour sauce over cook steaks/chicken breasts and serve.
1 ounce mozzarella cheese -- grated
3 tablespoons grated Parmesan or Romano cheese (optional)
Preheat broiler to as hot as you can get it. Broil cook steaks/chicken breasts on top rack of oven (just about 2-3 inches from broiler) until brown on one side. Turn and broil second side. When almost to your desired doneness, remove from broiler and spread with tomato paste. Sprinkle lightly with Italian seasoning (if you don't have it pre-mixed, just sprinkle on a dash of oregano, basil, and rosemary), and top with cheese. Return to broiler until cheese is melted and beginning to brown.
Optional vegetables:
