I love fish tacos, just love them, but since my favorite fast food place has sold to I think Taco Bell they are not for human consumption anymore. The fish inside the batter has the consistency if mashed potatoes. I am actually desperate enough to want to go to the local fish market and get some fish and make some tacos for the whole family. Anybody here has a clue on how I make a beer batter and then what?

I asked Karen N for the recipe and copied to my computer. Here it is:
FISH TACOS from KarenN Here's the basic recipe I use...
1 cup all-purpose flour 2 tablespoons cornstarch 1 teaspoon baking powder 1/2 teaspoon salt 1 egg 1 cup beer
1/2 cup plain yogurt 1/2 cup mayonnaise 1 lime, juiced 1 jalapeno pepper, minced 1 teaspoon minced capers 1/2 teaspoon dried oregano 1/2 teaspoon ground cumin 1/2 teaspoon dried dill weed 1 teaspoon ground cayenne pepper
1 quart oil for frying 1 pound cod fillets, cut into 2 to 3 ounce portions 1 (12 ounce) package corn tortillas 1/2 medium head cabbage, finely shredded
DIRECTIONS To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry about a few lumps). To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.
Q: When you say "Lightly fry tortillas" is that in the deep oil or just on a lightly greased griddle (or pan). A: I just use a lightly oiled pan, though my uncle does them in more oil.

I would use Karen's recipe too.
But when I eat fish tacos in the southwest on in Hawaii, the fish is always grilled. I would grill it and skip all the frying mess.
Really, it's more of a method than a recipe. Take ideas from Karen's and use what you already have in the house. Lime juice is really good, so try to remember to buy that.

Wahoo's here, a fish taco place owned by two Hawaian former surfers, grills the fish too. I can't even swallow naked fish doused with pico de gallo. - No, no, no Yip, my fish needs to be dressed up. I am the only one though, my family loves Wahoo's. They serve it with black beans and jasmin rice. I stick to the beans and rice if we go there.

Yes, it is a method - I never really so them the same way twice I do admit to loving a nice grilled fish taco, too IF the fish is REALLY fresh - which isn't always the case living in Oklahoma But I also love a good ceviche - which I will BE eating in November!!

I was surprised to find a Wahoo's in Denver too.... My dad's name is Wahoo, so I got him a bumper sticker from one in San Clemente
