I haven't made this in years, but it was really really good. This is one of many recipes for Cioppani - San Franscisco seafood stew, and you don't have to follow it exactly. You can use whatever is in season and affordable, but I do think you need a nice mix of fish and shellfish.
The nutrition info from my original recipe made it sound a lot lower calorie then when it calculated in the WW recipe builder. Either way, it is a healthy meal.
Easy Cioppino POINTS: 4 for 8 servings INSTRUCTIONS
2 Tbsp butter 1 medium onion(s) 1 medium bell pepper(s) 14 1/2 oz Del Monte Italian Recipe Stewed Tomatoes 1 cup fat-free beef broth 1 cup Tropicana Vegetable juice, spicy 8 oz canned clam juice 1 tsp sea salt 1 pound halibut fillet(s) 12 medium raw mussels, in shell 1 pound shrimp 2 clove garlic clove(s)
Melt butter in a dutch oven; saute onion, bell pepper and garlic until soft - about 5 minutes.
Stir in 1 can stewed Italian style tomatoes, beef broth (or dry red wine), spicy vegetable juice (spicy V8 etc), clam juice and salt. Boil, then reduce heat to low. Cover and simmer for 15 minutes.
Stir in fish and clams (or mussels). Boil, reduce heat to low. Cover and simmer for 5 minutes
Add peeled, deveined raw shrimp. Bring to boil, reduce heat to low. Cover and simmer for 5 minutes, or until fish flakes.
Serve with soughdour bread (additional points)

My dinner is pretty boring, but also relatively healthy.
I'm having salmon with a bit of Teriyaki sauce on it, cooked in my George Foreman. On piece makes two meals and I generally try to do this once a week to get in two servings of fish. I think I will steam my frozen brocolli & cauliflower to have with it. Not sure what "starch" - maybe a slice of toast later. I have lots of breads left, but not much fats since I had a good bit of yummy cheese (jarlsburg & smoked gouda) for lunch.

I thawed some ground elk last night, will probably just brown it and do a meat and marinera sauce with pasta unless mom has something else in mind.

I baked some beef pot pies by swanson's (and I'm glad to see they aren't overly-big), some green beans for me, corn for hubby, and an angel food cake with ground strawberries and cool whip for the topping.
Now, of course, I'm munching on some nuts to tide me over till hubby comes home so we can EAT.

Hubby and the boys ate pizza last night. I had some leftover chicken/bean soup. It was so warm in my tummy! It's hubby's night to cook tonight, and he's kind of befuddled as to what to make. He mentioned scrambled eggs with chili, and that'd normally be okay but I have to do the chili toppings myself. Just the tiniest dab of chili, no cheese or anything else, or salsa instead. I loff eggs with salsa! I also have some delish seeded whole wheat bread I made, so some toast would be good too. And maybe a piece of fruit, if I'm getting wild here.
