Even people who aren't wild about fish seem to like this one. This is one of mine and hubbys and my WW buddy and her hubbys favorite.
Mediterranean Fish POINTS: 3
10 oz canned diced tomatoes 2 clove garlic clove(s) 20 large olive(s) 1 medium onion(s) 1/2 cup salsa 2 tsp Italian seasoning 1 pound raw tilapia 1 tsp olive oil
Sautee diced tomatoes (undrained) in 1 tsp oil. Add crushed garlic,Italian seasoning, onions and olives. Bring to boil. Place fillets on top and simmer until fish flakes easily. Top with salsa.

I have to tell you, I start with the frozen, individually wrapped tilapia and don't bother to thaw in advance. Any mild white fish will work. I use a canned diced tomato that is in a jar - supposed to be "fresh canned" and it is wonderful flavored. This dish would be devine if you grow your own really flavorful cooking tomatoes.
The other trick is to use a few very flavorful olives. Not black olives, but the greek or someother with kick butt taste as that gives a lot of zip to the flavor.
This is a very forgiving recipe, I use basil and oregano and anything else I decide is Italian. I think one time I even put fresh cilantro in.

I think for me and mine, I'd pass on the olives and throw in a chopped chipotle pepper. I loff their smoky taste, and hubby doesn't care much for olives. (Yes, he's defective that way.) This one looks really good, and super easy! And I ADORE tilapia!!! Thanks, Sheryl! You keep 'em coming, okay?

Yum! Maybe I could even get my hubby - who won't eat fish unless its breaded - to eat this one. With the salsa and everything he might eat it. Tilapia is such a mild fish I might just get it by him.
