OH OH OH!! What a terrific idea!!! We should talk about this every day...I know *I* could benefit from dinner ideas. I don't know. We have 2 frozen chicken breasts, lotsa frozen ground beef, some frozen brats, frozen veggies, and maybe a roast of some sort. The usual spices in my cubbard, and potatoes. I haven't decided what to make yet. For lunch I had a can of green beans and a left over chicken breast. Sounds healthy till I tell you the chicken breast was slathered in spaghetti sauce and some cheese. But the green beans were good for me

Since I have Bradley and Bryan to cook for, So... I slow cooked a ham, with a mustard and honey sauce I made for glazing... I sliced up some potatoes for scalloped potatoes, but I left the skins on for added fiber. I used 4 big potatoes, to 2 cans of mushroom soup mixed with a bit of water, a handful of shredded cheese and a can of sliced mushrooms, pepper to taste. I steamed some frozen veggie blend from the freezer, it's got cauliflower, snowpeas, red peppers, lima beans and carrots in it. And that, is what we're having for supper.

Cherokee, nothing wrong with your choice. Spaghetti sauce is very high in lycopene, an anti-cancer micronutrient. Tomato based foods are your friend. If I remember right, the American Cancer Society recommends nine tablespoons of tomato paste a week.
We're having tilapia on the grill served with a dollop of three bean cilantro salsa, and some quickly sauteed Thai veggies. I'm using a scant amount of olive oil (a tablespoon) to saute it. And some fresh fruit topped with fat free yogurt with some vanilla in it.

we're having leftover chicken breast chopped up into a light alfredo sauce on top of brown rice. I'll have salad, ray will have some kind of canned veggie (ick)

To make it easier for me (plus I hate to cook) I picked up a ton of the lean cuisine/weight watcher/ and other dinners that are low in calorie. Stay away from Marie Calenders-wow lots of fat and calories in those. But that way I have a huge choice and I also have a huge salad and even desert. For lunch I will have some sort of a sandwich, you know I don't miss the mounds of meat and real cheese I used to put on them, a few slices does just fine. Throw in a fruit or two and wa la not feeling deprived at all. In fact I am eating better than when I had to cook. Not sure hubby likes it much since he also has to have a TV dinner. LOL But he WAS the one who pushed and pushed about going on a diet. Truth be told I don't think he minds so darn much.

I'm having romaine salad with mushrooms, cucumber and some hardboiled egg, tossed with a little vinegar/olive oil and dry herbs. Later, hubby and I will have some hot homemade apple crisp with a little Bryers french vanilla ice cream - we have finally gotten ourselves down to small portions on that. mmmm very satisfying and not too bad if we have it occasionally. I make two apple's worth and that works out to two nights for us. I'm still waiting for my book to arrive so I'm not really "on plan" just yet, I'm doing my best not to gain in the meantime. I love plain low-fat yogurt, it's hard to find locally. I like it as a tart dressing on middle eastern foods or as that Greek cucumber/dill/yougurt salad.

I bought some chicken wrapped in bacon and am baking it, I won't eat the bacon, Baked potatoes, salad and a fruit salad.

I'm having spaghetti - I'm actually cooking!! I have some ground beef already cooked with onions that I am thawing. I am using Prego sauce from a jar, but adding lots of chopped fresh mushrooms and a chopped zucchini squash to get more veggies in.

Last night, I made a devine Chicken and Brocolli casserole. It was a staff favorite recipe from Cooking Light 2006. It tasted so rich and creamy, like a decadent sauce, but a cup was only 6 points (about 275 calories). I earned alot of activity points yesterday and was so hungry from the cold that I ate a cup and half. I had enough points, but I still felt kinda bad because I really shouldn't eat so much quantity. Anyway, I need to share that recipe because it is a great cook and freeze ahead recipe. A single batch was nearly scarfed down by 4 of us (was supposed to serve 8 - but I have teenagers!) - about 1.5 servings of leftovers only. Next time I will make a double batch and make freezer meals.
Today, the guys are snowboarding so I am on my own. I will probably just eat leftover chili with corn tortillas (Just one point for 2 small ones!). If I have the energy, I might do some make ahead meals for later in the week. I hate getting home from work, hungry and having to start dinner from scratch. It is a recipe for BLTs (you know, Bites, Licks and Tastes which are sometimes practically a meal in themselves)

For lunch I had a Lean Cuisine - it was salmon with lemon/dill sauce and it was wonderful. Only something like 240 calories! For dinner I made tortellini with meat sauce, broccoli and garlic bread. I only had one piece of garlic bread and one helping of tortellini so I was proud of myself.

Sheryl, is the casserole low sodium or is there a way to make it low sodium. If you can, I would love the recipe and see if I can make it work, it sounds great.

I had a veggie grill chicken patty, with grilled squash, (yellow and green), and broccoli. Grilled it with Olive Oil and a touch of BBQ sauce.

Tonight was a "need to make it and get Brad to a hockey game in a snowstorm.. Ugh... So we had chicken noodle soup, (I had mainly broth) and grilled cheese sammiches, made with a little olive oil on the pan instead of buttered bread... I also made it with whole wheat bread, and fat free kraft slices. Not a good day.. I ate a doughnut at lunch. I have to stop eating food when I'm stressed out.. and eating when It's available.. just because it's there. :S
