From JoAnna Lund's Arthritis cookbook
Easy Tuna Noodle Casserole
2 cups hot cooked noodles, drained (1 3/4 cup uncooked) 6 oz can white tuna packed in water, drained (I use albacore) 1/2 cup (2.5 oz jar sliced mushrooms, drained (I use 4 oz can) 2 cups (16 oz can) cut green beans, drained (I use french cut and chop them a bit more) 1 can (10 3/4 oz) reduced fat cream of mushroom soup 1 t dried onion flakes (I skip this usually) 1 t dried parsley flakes 1/8 t black pepper 4 - 3/4 oz slices of reduced fat American cheese
Preheat oven 350 deg; spray 8x8 baking dish w/ butter flavored cooking spray In large bowl, combine everything except cheese & mix well Spread in pan; top w/ cheese Bake 25 - 30 minutes, let set 5 minutes
Supposed to serve 4 - each 253 cal, 5 gms fat, 21 gms protein, 31 gms carbs; diabetic exchanges 2 meat, 1 1/2 starch, 1 veg
However, I make it three servings because it just isn't enough. I suppose if I had a big salad with it or something, but I don't.
It took a bit to get used to the green beans in it, but I don't mind them now.

Mmmm, I think it looks yummeh! Plus I think I'd like the green beans in there. I'd have to use real cheese though; I just. Can't. Do. Low fat cheese. Thanks, Dorothy! I think this is supper!
