I was so upset the year my Mother in Law wanted to make this dish to bring for Christmas. I had my own favorite broccoli rice recipe. She insisted on bringing this dish. I thought it was so stupid. Having turkey for the main dish and then a side dish with CHICKEN in it!! We have had this casserole every Thanksgiving and every Christmas ever since the first Christmas that it was brought to our home, close to 20 years ago. Broccoli-Chicken-Rice-Casserole Chopped broccoli (2 pound bag) 2 cups dry minute rice 2 cups cooked chopped or diced chicken 2 tablespoons chopped onion 1/2 stick butter 1 can cream of chicken soup 1/2 cup water 1 cup milk 16 oz jar cheese whiz 1 cup diced celery cook broccoli until almost done, drain and put in a casserole bowl. add rice, chicken, and onion Put the rest of the ingredients in a saucepan and heat till cheese melts. (stir so it wont burn) Pour over broccoli mixture Bake at 350 degrees for 45 minutes or slightly longer You can mix this up the night before and bake just before dinner, or mix ahead of time and freeze.

Do you bake this covered?
I'm with you all the way, right up until the Cheez Whiz. I think if I threw that in my cart it would hop back out! ;D

I remember this dish however when my in-laws made it, it didn't have chicken in it. Actually this is the only way that I can eat cheese whiz. The casserole isn't the same if you try to substitute some other type of cheese.

Cheez whiz makes a great dip. Take cheez whiz, cream cheese, worchestire sauce and a cup of beer. Melt it all together and dip chunks of bread in it. Yum. I think I'm going to try this broccoli casserole. Sounds yummy!
