Just found and made this recipe. I'm no cook, but want to do stuff by scratch. These are by far yet the best pancakes I've made! And easy...
Buttermilk Pancakes Recipe
12-15 servings 15 pancakes time to make 15 min 5 min prep
2 eggs (slightly beaten) 2 cups buttermilk 2 cups flour 1 teaspoon baking soda 2-3 tablespoons sugar 1 teaspoon salt 1 1/2 teaspoons baking powder 3 tablespoons oil (or melted shortening)
1. Use just one bowl. 2. Beat eggs. 3. add buttermilk then add baking soda. 4. Stir. 5. Add flour, sugar, salt, and baking powder. 6. Stir. 7. Fold in oil (Do Not over stir, a few lumps are okay). 8. Lightly grease or spray a griddle heated to 375 (I just heat my griddle over medium heat on the stove). 9. Spoon 4" circles of batter and turn when puffed up and full of little bubbles. 10. May add blueberries, chocolate chips, or drained pineapple bits after batter is poured.
Can even freeze leftover pancakes!

Those look great! And for those who are using the powdered buttermilk, I think you'd get the leavening you want if you add the buttermilk powder and soda to the other dry ingredients, and mix thoroughly. You'd just add water to the eggs.
That way you wouldn't have to overmix.

That is how I always add the powdered buttermilk. The buttermilk powder blends better with the liquid when it has the other ingredients to keep it from forming dry little lumps.
