Yikes! that's coming soon! I don't personally know any diabetic recipes, but I found this website - www.diabetic-recipes.com/cat_cakes.htm it looks like it should have "legal" recipes, and I notice it gives all the sugars/serving kind of info. AllRecipies.com also has all kinds of cake recipes and gives "diabetic starch exchanges", so even if there is sugar in the recipe, the person knows how much they can tolerate or can adjust their medication. I have a cookbook with some diabetic friendly recipes - it gives the exchanges for each serving. The pumpkin pie is excellent. The pecan pie wasn't any good.
It has the following cake recipes: Browning Pudding Cake - says it is for chocoholics Golden Gate Carrot Cake Chocolate Cake Coconut Cake Filbert Applesauce Cake ?? Lady Baltimore Cake Marashino Cherry Spice Cake
Pick a couple and I'll type in those recipes. In exchange, if you do one, you can tell me how it turned out.

Dorothy..I just found out that her favorite cake is a jello cake.. not even diabetic.. but that is the way she eats.. TERRIBLE!!! and chocolate is her favorite too
When you have the time..please type up the chocolate cake AND the carrot cake!!!

From "Cooking Healthy Across America" by JoAnna M Lund:
Golden Gate Carrot Cake (freezes well)
1 1/2 cups all purpose flour 3/4 cup pourable Sugar Twin or Sprinkle Sweet (I've used Splenda in other recipes and it worked) 1 t baking soda 1 t ground cinnamon 3/4 cup unsweetened applesauce 1 egg or equiv in egg substitute 1 t vanilla extract 2 cups grated carrots 1/2 cup + 1 T raisins 3/4 cup (1 oz) chopped walunts 1 8 oz pkg fat-free cream cheese 1 T skim milk 1 t coconute extract 1 cup Cool Whip Free 2 T flaked coconut
Preheat oven 350 deg Spray 9x9 cake pan w/ butter flavored cooking spray In large bowl, combine flour, 1/2 cp Sugar Twin, baking soda & cinnamon Add applesauce, egg & vanilla Mix gently to combine Stir in carrots, raisins & walnuts Spread into pan; bake 30-35 min until toothpick inserted in center comes out clean Place cake pan on wire rack and allow to cool completely In large bowl, stir cream cheese w/ spoon until soft Stir in milk, coconut extract & 1/4 cup Sugar Twin Add Cool Whip Mix gently to combine Spread over cooled cake Sprinkle coconut over top
8 servings; refrigerate leftovers
Diabetic Exchanges: 1 1/2 Starch/Carb; 1 Fruit; 1 Meat; 1/2 Fat
Chocolate Cake w/ Chocolate Frosting
1 1/2 cups all purpose flour 3/4 cup pourable Sugar Twin or Sprinkle Sweet (or Splenda) 1/4 cup unsweetened cocoa 1 t baking powder 1 t baking soda 1/3 cup fat free manyonnaise 1/4 cup no-fat sour cream 1 T vanilla extract 2 cups water 1 - 8 oz pkg fat-free cream cheese 1 - 4 srvng pkg Jell-O sugar free instant pudding mix 2/3 cup nonfat dry milk powder 3/4 cup Cool Whip Free
Spray 9x9 cake pan w/ butter flavored cooking spray In large bowl, combine flour, 1/2 cp Sugar Twin, cocoa, baking powder & baking soda In small bowl, combine mayonnaise, sour cream, 2 T of vanilla extract & 3/4 cup water Add liquid mixture to dry mixture Mix gently just to combine Spread into pan; bake 25-30 min until toothpick inserted in center comes out clean Place cake pan on wire rack and allow to cool completely In large bowl, stir cream cheese w/ spoon until soft Add dry pudding mix, dry milk powder and 1 1/4 cup water Mix well using wire whisk Blend in 1 t vanilla and Cool Whip Free Spread frosting over cooled cake
8 servings; refrigerate leftovers
Diabetic Exchanges: 1 1/2 Starch/Carb; 1/2 Meat

Hope you managed to get something made, snaffle! As a diabetic for more than 20 years, however, I have to make the comment... just because a diabetic eats sugar in things does not make it "terrible"... honestly, if diabetics "should not" eat sugar, neither should so called "regular people." Sorry, I've had 20 years of people saying to me, "you're diabetic. You can't eat sugar." It's all about knowing how to eat in moderation, knowing how much insulin is required for what you're eating, and knowing how to balance out things. I eat pretty much whatever I want and I am complication-free. While I realize not everyone is capable of controlling their blood sugars and insulin levels easily, please don't generalize that diabetics are terrible if they eat something sweet. It's just as bad for you as it is for a diabetic. OK, off my soapbox. Jess

Jess.. thank you... I completely understand..
this lady is turning 60.. she is probably 100 pounds overweight. She lives on diet coke.. when she drives into town she HAS to stop at McDonalds... says she need the protein from the hamburger.. but will get fries too.
She almost always has a large brownie from caseys in her car.. says she keeps it with her .. just in case..
she will admit she eats terrible.. what a shame.. she is also a super duper heavy smoker...
