I wasn't too impressed with these last night--but after they spent the night on the counter, they are pretty darned good. Since I didn't have everything they called for (and the store is a half hour away, I will list what I used.)
Applesauce Oatmeal Cookies
1/2 cup packed brown sugar 1/4 cup sunflower oil (I used Smart Balance) 1 tablespoon vanilla 1 cup applesauce 1 cup soft white wheat (pastry) flour (I used hard red wheat) 3 cups old fashioned rolled oats 1/2 cup pecans, chopped (I didn't have any nuts at all) 2/3 cup dates, chopped (I used soaked raisins)
That is it, no eggs, no salt, no soda, no baking powder. I agree, it was a scary thought.
Preheat the oven to 375F In a large bowl, beat together the brown sugar, sunflower oil and vanilla. Stir in the applesauce, wheat flower, rolled oats, pecans and dates. Place on no-stick cookie sheets (or parchment paper) rounded teaspoons of the dough about 1 inch apart. Bake the cookies for 20-25 minutes or until the cookies are browned. Cool on a wire rack.
The ones I like best this morning are the ones that were cooked the least.

I'd like to try these using Blue Agave Nectar instead of the sugar. Be really low glycemic that way
