Anyone else make these at Christmas? They dissappear around here so FAST - and if I don't make them, I get ALL kinds of complaints....
Thought I'd share my basic truffles and some variations.
Basic Truffles:
2 cups milk chocolate chips
1 cup semi-sweet or dark chocolate chips
3/4 cup heavy cream
Put chips in large bowl. Heat cream until just coming to boilng, and pour over chocolate chips. Let sit for 1 minute, then stir until all melted and full incorporated. Place in 'fridge for 30-40 minutes. Remove and stir for a minute till lighter in color, then place rounded teaspoonfuls on waxpaper lined tray. Chill until set, about an hour. Take out and roll in balls. Roll balls in your choice of chopped pecans, cocoa powder or melted chocolate. These are SOOO good!
Variations:
Orange Chocolate truffles: add 1 tsp grated orange rind to cream, and stir 2 tsp orange extract into chocolate mixture with cream. I coat these in milk chocolate.
Dark Chocolate Raspberry Truffles: Use all semi-sweet or dark chocolate chips. Add 2 tsp raspberry extract wth cream. Coat these in the best dark chocolate you can find! Then I drizzle melted white chocolate over the tops.
White Chocolate Citrus Truffles: Use all white chocolate chips in place of milk/dark. Add the orange rind and 2 tsp of orange extract. Dip in melted white chocolate and top with grated orange rind. I made these for the Sunday fellowship and everyone thought they were the best yet!
Mint Chocolate Truffles: Add 2 tsp peppermint extract with the cream. Cover in dark chocolate.
Hints: When rolling the balls - use plastic gloves on your hands. To make the dipping chocolate: melt the semi-sweet/dark or white chips with 2 tbls shortening in the microwave about 30 seconds, stir and zap again for 25 seconds, repeating until all are just melted and smooth, then add about 12 unmelted chips and stir them in until they melt - this is the cheaters method for making the chocolate like it's tempered Then I put a spoonful of the melted in my gloved hand and roll the balls in that! EASY!
