This is the recipe that the ladies of the Altar and Rosary Society of St Mary's used for years every fall when they made apple pies to sell as their major fund raisier.
Apple Pie (9 inch pie)
5 cups sliced apples (McKintosh or a blend of varieties) 1/2 cup sugar (3/4 if apples are tart) 1/2 tsp cinnamon 1/16th tsp nutmeg (or less if desired) 1 1/2 tsp flour 1/8 tsp salt 1 tablespoon melted butter (pour over pie filling)
mix the ingredients and put into a 9 inch pie shell. Put the top on, pierce the cover with a fork and sprinkle sugar on top
Wrap alluminum foil around the edges so they wont burn.
Bake at 425 degrees for 25 minutes turn oven down to 350 degrees remove aluminum foil bake approximately 20 minutes longer
top with ice cream or cheddar cheese (apple pie without cheese is like a kiss without a squeeze)

I was going to say that the best apple pies start with Macintosh apples! This is the recipe I use--it comes out of an old Better Homes cook book.

Instead of flour you can use instant tapioca.
