I had to create a Rhubarb Pie recipe that I liked. I have always hated Rhubarb anything. This revised and re-revised recipe is similiar to many others.. but a bit different.. made to please even the best of rhubarb haters!
4 cups chopped RED rhubarb 1 1/3 cups white sugar 6 tablespoons flour 1 tablespoon butter (melted) 2 or 3 tablspoons strawberry jello (the powder)
pastry for a 9 inch double crust pie
preheat oven to 450
combine all the ingredients and stir well
Pour into a lined pie shell, cover with top crust. Use a fork and poke holes in the top.. sprinkle with sugar. Place pie on the LOWEST rack.
Bake for 15 minutes Reduce oven temp to 350 and bake for 30 to 35 minutes longer
I wrap aluminum foil around the crust edge and remove it when the temperature is dropped to 350
This pie mix can be made ahead of time and froze.
SUPER SECRET: For the best tasting rhubarb, fertilize the plants with FRESH horse manure
