Time to start digging out those fall recipes! This is the cake I took to Linda's house, and she asked me for the recipe so I thought I'd share it here too.
Pumpkin Streusel Cake
For the cake:
2 eggs
3/4 cup sugar
1/2 cup canola oil
1 teaspoon vanilla
8 ounces (1 cup) canned pumpkin
1-1/4 cups flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
If you don't have pumpkin pie spice use:
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon ground allspice
Curiously, the ingredients in the mix create more than the total 1 tsp called for in the recipe, so I just eyeballed the measuring spoons and filled them only about 2/3 full when making this, as I didn't have the prepared pumpkin pie spice.
Also, I couldn't find my nutmeg, so the cake you had didn't have any in it.
For the Streusel topping:
1/4 cup flour
1 teaspoon cinnamon
1/2 cup firmly packed light brown sugar (I think I used dark)
1/4 cup chilled butter cut into pieces
1/2 cup chopped pecans
For the glaze:
1-1/4 cups powdered sugar
2 tablespoons soft butter
1/2 teaspoon vanilla extract
2 tablespoons milk, or more to make it thin enough to drizzle.
I also added a couple of tablespoons of cream cheese.
The recipe calls for 1/2 teaspon dark rum, but I didn't have any.
Beat the eggs and sugar until light and fluffy, add the oil, vanilla, and pumpkin and blend well.
Whisk together flour, baking soda, spices, and salt. Stir the pumpkin mixture into the flour mixture by hand and blend until all ingredients are moist. Do not overwork.
Put batter into an 8-inch springform pan (I only had a 10-inch springform pan and thought it would come out too thin, so I just used the glass 9-inch pie pan).
Blend the streusel ingredients together by hand until it is crumbly and sprinkle over the batter.
Bake at 350 for 30-35 minutes or until a toothpick comes out clean.
Then just drizzle your glaze over the top when it's done, and voila!
It was really moist and yummy, and thankfully it came out good as I was taking it to Linda's house and had never made it before. She got to be my guinea pig!
