I'm looking for salmon recipes to try and get my "breaded fish only" hubby to eat fish. Any good ones?

Okay, to me, the key to EXCELLENT salmon is more the fish then the cooking method. It must be Pacific and not Atlantic. King is very good but there are many other acceptable varieties. It really must be wild, not farm raised - farm salmon is bland. If you start with really good salmon, you could cook it with a squirt of lemon and a dab of butter and have the best meal ever. The best salmon we ever ate was purchased off a dock in Friday Harbor (not far from Ben) and cooked that night over an open campfire flame with just butter and we raved about it for like a decade.
Our friends who used to fish salmon in Alaska had this great recipe where they added some seasonings and then sprinkled with brown sugar and butter. They wrapped the whole works in foil and baked it until flakey.
Sometimes, I cook it with lemon and butter and pepper by just "broiling" in the oven.

Do you know what kind of salmon you have? King & Coho (Silvers) are best, Sockeye are good, they have a darker red meat. Pinks are okay.. Chums are good for smoking, because they are pretty oily.
Do you have fillets or steaks? I prefer fillets because you can remove the pinbones before cooking them.
I use a little seafood seasoning, smoked salt, a little garlic and butter on my fillets. The best way (I think) is on a BBQ, but baking is okay too.
Sheryl is right about the fish needed to be wild. Farm fish really lacks flavor. Oh yeah..and the fresher it is, the less fish smell it will have.

You're not a kiddin' about the wild being best. Ugh. Out here in the corn if you want fresh salmon, you'll pay 6.99-8.99 for farm raised, and 18.99 and up for wild, if you can even find it, and you very rarely can. Since I often have to settle for the farm raised, I always have to ask for tail pieces. There's something gross about how fatty the other pieces are; they just taste wrong, and the texture's too squishy, like it's been floating in the bottom of a tank somewhere. The tail has the least fat because it's mostly muscle; it's been driving the fish. I know the fats are what you want for the Omega 3s and 6s, but I can't help but wonder just how much is really there after they've been farmed. After all, the pink color's fake too. We just put ours on the grill, and I'm so weirded out by the fat taste that I put it skin side down on the first side, so that some of that fat'll cook away. I don't generally put anything on it, but sometimes I put on some grilling salt that has hot peppers in it. I did make some flaked salmon into a casserole once after seeing a tuna casserole recipe Chris put up here once, and I remember just sort of faking it. I remember hubby liked it a lot, but it isn't compatible with my danged diet right now so I haven't made it again. Sorry to be such a bummer, Newfygirl. I guess this was a bit of a fish rant for me. We love salmon. All I do is moisten the top with something (usually a 'natural' pam type spray) sprinkle some cumin and just a tiny touch of garlic powder and broil. The flavor really comes through and is deeelicious. I also make one for myself with a Thai panang sauce, it has a little peanut taste and is spicy. Also, salmon is great in a fish stew.

We have a boatload of salmon because Andy works with a woman from Alaska. She is constantly giving us salmon. She does website work and gets paid in fish from her friends in Alaska and she is sick of it, so she gives it away.
