I did it again. I made a totally divine soup yesterday in the crockpot. I'll try to explain how I did it.
1 whole chicken (I use the "whole fryer" type) 1 onion seasonings: I use parsley, sage, rosemary, thyme and garlic water potatoes carrots celery other veggies as desired
First, de-skin the chicken as much as possible and remove as much fat as possible (optional)
Don't forget to remove neck, giblets, etc., if your chicken comes that way!
Place one whole onion inside the chicken.
Place chicken in the crockpot, cover with water. Add seasoning to your taste. I "free-hand" it but estimate that I probably add about 1/4 or so teaspoons of each, though maybe a bit more garlic.
Let cook for a few hours. When the chicken is done, remove it from the crockpot and set aside to cool and de-bone.
While chicken is cooling, add potato, carrot and celery chunks to broth, and cook until veggies are done but not mushy (we like our veggies a bit crunchy). Debone the chicken, cut/tear into bite-size pieces and add back to broth/vegetable mix. Allow chicken to reheat and then serve!
