Recipe complements of "Fix It and Forget It" cookbook for crockpots/slow cookers.....
3/4 cup cornmeal 1 1/2 cup milk 1 egg, beaten 1 pound ground beef, browned and drained 1 envelope dry chili seasoning mix (I used taco seasoning mix) 16 ounce can diced tomatoes 16 ounce can corn, drained 1 cup grated cheddar cheese
1. Combine the cornmeal, milk and egg. 2. Stir in meat, chili seasoning mix, tomatoes and corn until well-blended. 3. Pour into slow cooker. 4. Cover. Cook on High 1 hour, then on Low for 3 hours. 5. Sprinkle with cheese. Cook another 5 minutes until the cheese is melted.
This would be a nice meal to have for informal company--serve with chips and homemade salsa and you too can sit around and enjoy the company and let the crock pot do the work. It also would be an easy dish to take to a potluck in the crockpot. I've eaten in a lot of Mexican restaurants--including a lot of them right down on the border. This is GOOD. Next time I am going to make it with black beans instead of hamburger. Linda

Does sound good. Do you put in the liquid with the tomatoes? I have got to start cooking more! I really like corn in dishes, so that part sounds like a nice component.

Yep, just dump the cans in, liquid and all. The corn really gives it a sweet flavor when you hit a piece of corn. It is sort of like a sweet explosion in your mouth--very pleasant. Linda

Linda this sounds great but I have a question. I would like to make them, like you said, without meat. My family doesn't like black beans, is there a difference in consistency if I used kidney or pinto beans or is there another bean? I think that black beans are harder aren't they?

Black beans aren't any harder than the other beans once they are all cooked. We just happen to love black beans. One of our favorites is black bean soup. There is no reason you couldn't use kidney or pinto beans--I bet that putting them together would be even better. Try a can of each. Linda

I'm already looking for an excuse to make it again. I even had it for breakfast the morning my DH didn't leave me any milk (it is 20 miles to town.) It isn't just any ol meal that makes a wonderful breakfast...... Linda

My husband insists that its the corn that makes it so good... I dunno - all I know is that its easy and tastes great! I could see how it would be fun to experiment with different ingredients - add some green pepper and onion, some beans...We need to finish off the leftovers today.

How many servings is this? It sounds really good!
I have some recipes for cornbread casseroles that are very similiar, but I like the idea that this one is in the crockpot!

It says "8" servings. It makes a crock-pot full. I think it probably depends on what you serve with it how many "servings" it makes. I'm making it again today--adding some black beans this time as well. And I agree with Newfygirl's husband. When you hit that chunk of corn, the flavor just explodes in your mouth!
Oh, and this warms up so good--you need to add more cheese because chances are the melted cheese over the top has already been scooped off..... Linda

ok, it is in the crockpot as we speak! Because I can't leave well enough alone, I made some minor modifications... but it looks great. My Taco Junk recipe is a similiar crockpot recipe, only it doesn't have the cornmeal. I am looking forward to that addition!
