Cilantro Chicken Recipe Recipe is from Sunset Magazine and I stole from recipezaar.com 4 servings/ 185 calories/4.9 G Fat PLUS any sides 4 servings 25 min 10 min prep 4 boneless skinless chicken breast halves (2 lb. total) 1/4 cup lime juice 1/2 cup chopped fresh cilantro 6 garlic cloves, chopped 1 tablespoon honey 1 tablespoon olive oil 1/2 teaspoon salt 1/4 teaspoon pepper
Pound the chicken breasts to an even thickness (about 1/2 in.) and place in a shallow baking pan. In a small bowl, mix lime juice, cilantro, garlic, honey, olive oil, salt, and pepper. Pour over chicken and turn pieces to coat evenly. Cover and chill at least 30 minutes or overnight. Lay chicken on a grill over medium heat (you can hold you hand over the surface only 4 to 5 seconds) and cook, turning once, until no longer pink in the center, 4 to 6 minutes per side.
I served this with Cuban black beans - spicy, and some rice for the guys. The green side was a spinach salad with mandarin oranges. I whisked a dressing out of fresh lime juice and olive oil. Very tasty.

Okay, the Nutrition info is wrong for that quantity of chicken (I copied from the recipe website). I think the nutrition info is pretty close if you use 1 pound of chicken for 4 servings.

This sounds great and best of all, it's low sodium for DH. Tell me about the amounts to make the dressing - the lime juice and olive oil - I usually buy bottled and this sounds good and I am in need of change.

Eww, bottled dressing! Once you make your own from scratch for awhile, then you'll taste all the chemicals in the bottled stuff. It's really gross, and you'll never want that bottled stuff again.

Well, juice is a substitue for vinegar - so whatever ratio you like for that. I actually have a recipe somewhere, but right now can't remember the proportions. Kinda a big swig of olive oil and a big swig of lime juice... I know I am a lot of help. I also added a bit of fresh ground pepper, and finely chopped cilantro and WHISKED it before pouring on.
BTW, if you want to make your own dressing in the future, buy some nice quality extra virgin olive oil and nice basalmic vinegar. Trader Joes had really good basalmic vinegar for cheap. The lime juice I bought from the freezer section of the grocery. It is minute maid or something and came in a bottle since i don't want to squeeze limes. Once it thaws, it keeps in the fridge for a couple of months.

I made this last night and everyone, including the kids, loved it. It would have been better on the grill, but I had to cook it in some olive oil because we were out of charcoal.... YUM!

Glad you liked it. I am trying a couple of new recipes over the next week - including a healthy snitzel recipe that I got from Cooking Light. I will let you know since my boys are hard critics of German food since they've had the real deal and have a real taste for it!

My first question is, how can anyone hate cilantro? There are several foods I feel that way about - how can any person possibly dislike chocolate, coffee or well prepared vegetables?
Chris, I actually think I could learn alot from cooking with you. I have tried making many foods, but have never attempted a single Greek recipe, and you seem to make them all the time. When we lived in Southern Germany, Greek and Turkish restaurants were as common as Mexican restaurants in the Seattle area. We enjoyed a lot of Greek food even though we often had no idea what we were ordering. Riley kept order liver by mistake, which is funny because I quickly learned the German words for food I never wanted to eat... liver being in the top five ... anyway, the boys would eat it and actually liked it! One of our favorite Greek places always gave you a little shot of booze with your meal - lunch or dinner. The men's and women's were different colors. Since Riley didn't drink, I usually got both little shots so life was good! I swear that the small Greek, Turkish and Italian restaurants in Germany still all tasted... well... just a bit German, like somebody snuck some ham in there somewhere! I didn't eat pork for the first two years we came back home...
