1 pound ground sausage 12 eggs 6 oz. cream cheese, softened 1 c. half and half or milk Garlic and onion powder to taste 3/4 t. salt 1/4 t. pepper 1/4 c. butter Brown sausage in skillet, drain. Process all but the butter in a blender or mixer until frothy while the sausage is cooking, stopping to scrape down sides. Add butter to sausage and melt in the skillet over medium heat; reduce heat to medium-low. Add egg mixture and cook, without stirring, until mixture begins to set on bottom. Draw a spatula across bottom of skillet to form large curds. Continue cooking until eggs are thickened but still moist; don't stir constantly and don't overcook. Sprinkle with chives if inclined. These are absolutely wonderful. My girls loooove them!

I do something similar to this only with diced bacon in place of the sausage and sliced green onions in the mix - my guys love this, too!
Have you ever tried an oven pancake?
Put 6 or 7 eggs in a blender and add 1 cup milk and 1 cup flous and a teaspoon salt. Blend well. Melt 2 tbls butter in a 13x9 inch pan in a 400 degree oven. When melted tilt pan to cover bottom and pou in egg mixture. Bake at 400 for 20 minutes. It puffs up and gets really light. Serve with warm maple syrup - the real stuff - or raspberry jam and sprikled with powdered sugar - Lazy Saturday Morning heaven at our house!
