I need a sweet potato or yam recipe. One of those recipes that is soooo special that even people who dont care for sweet potato's will like. I have a recipe for candied sweet potato casserole... but it is sooo sweet it is almost sickening , even after I cut down the sugar.

I like the ones that are made with good orange marmalade. That way you get the sweet and the tart. Buy the imported kind so you get it made with sugar instead of HFCS. I agree about the sweetness. If I wanted it that sticky, I'd have it for dessert.

Sweet Potato Casserole from Justin Wilson
2 and 1/2 lbs canned sweet potatoes, drained, slightly mashed (I mash about 1/2) 1 cup honey 1 cup moist coconut 1/3 cup Bourbon 1 cup chopped pecans Large can crushed pineapple 2 juice from pineapple can 1 cup sliced almonds (optional) 1 cup crushed walnut (optional) 1 cup raisins (optional) Marshmallows (if desired)
Mix everything (except marshmallows) into a casserole and bake at 325 degree for about 45 minutes.
If marshmallows are used, put them on top about 15 minutes before finished baking.
