Last night was the start of our first big winter storm of the season. We wanted some "comfort food"! A couple of weeks ago, we saw Nigella on the food network making something similar to Shepherd's Pie - last week, when I went to the grocery, I got the stuff to make something similar. Hubby does not like green peas, but we both love spinach. 1# ground beef, browned and drained 1 can diced tomatoes, most of the liquid poured off 1/2 medium onion, chopped small About 1.5 T worchestershire sauce, to taste Pepper, salt, garlic powder to tasteMix that in the large frying pan, then add about 1/2 small can tomato paste, few Tspoons of water 1-3T olive oil Frozen chopped Spinach - we get the kind that is loose in a bag, if you have the frozen block kind, you'll need to thaw and drain it. Warm through, let some of the moisture evaporate but don't let it dry out. While all that is going on, prepare some mashed potatoes. I make them from real russet potatoes, but you could use instant I suppose Put the meat mixture in a round cassarole, then spread the mashed potatoes on top, like a crust. Use a fork to lightly score the potatoes, they get nice little crusty bits I dotted mine with a little butter just because. Bake around 350 for about half an hour. This would be great with a salad but otherwise it has meat, veg and starch so it's ok as a standalone.

Hey, that sounds really good! And I like the tomato base rather than the white sauce; much better for you. I'll have to try this one; thanks!

heh, I just noticed I said "shopped" spinach, so I fixed that.
I don't think I would like it in a white sauce, glad I didn't know that was the standard way of making it! But I bet that's why the peas would go well.
