Sorry - been BUSY - didn't see this till now - hope I'm not too late!
2/3 stick butter (5 tbsp.) 2/3 cup granulated sugar 2 eggs 2/3 cup milk 1 cup flour
Makes about 20 krumkakes
1. Melt the butter. Do not overheat. 2. Thoroughly mix the sugar into the butter, stirring well. 3. Add the two eggs andbeat the mixture until light yellow in color. 4. Add the milk and flour and continue to blend until mixture is smooth. Shoupld be thin, but not "drippy" 5. You can add flavoring at this point - lemon, vamilla or almond. Almond is my favorite, lemon more traditional, just about a teaspoon or so. 6.Heat your krumkake iron - if you have one of the new fancy electric ones, just follow the directions. If you have an old-fashioned one like me, heat it till a drop of water sizzles, then drop the heat slightly. Pour the batter in the center of the iron, close the lid and cook for about 45-60 second, flip the iron and cook the other side for 30-45 secs. Flip the krumkake carefully off the iron onto a clean dish towel, then quickly roll around your wooden cone and let cool while heating the next one. Work fast and don't let it cool before you roll it!
I love to fill these with whip cream and strawberries IF there are any left - my DH and boys can eat them as fast as I can make them!
