I want a good cucumber slices recipe.. the type that 'grandma' always made in the summer and everyone loved. I am not sure what the ingredients are... perhaps mayonaise, vinegar, sugar and milk.

Well, I do a Japanese sort of version - I take the cukes, slice lengthwise, remove seeds, then slice in thin slices and cover with rice wine vinegar and a little sugar. Let them marinate a while - umm, umm good!
Then there is the greek Tzatziki - prepare the cukes similar to above excpt chop after removing the seeds then sprinkle with salt in a colander to drain. Meanwhile, prepare some really good plain yogurt - I like to drain in cheesecloth for a few hours, and chop LOTS of garlic - to taste, but I like lots. Then squeeze out all the moisture from the cukes, stir into your drained yogurt with the garlic and let set for a few hours for the flavors to meld, I like to add a some dill to this, too. You can use this for a dip for crackers and veggies or serve with chunks of dark bread. Also as a dressing in pita bread sandwiches - the BEST!

Here's what I do with cukes.
1. if the rinds are not tough, score them lengthwise with a fork. Otherwise, just peel the rinds off. Slice into thin slices. 2. slice some sweet red onion into thin slices, add to the cukes. Lightly salt and let sit for 20 minutes or so. 3. Rinse and drain. Make up a dressing with either sour cream or yogurt, some dill, salt and pepper. cover the cukes and onions and let sit in the fridge for an hour or so before serving so the flavors blend.
Greek Peasant Salad
1. Peel and chop a large cucumber, a couple of tomatoes, a green pepper, and about half a red onion. 2. Marinate in a Greek style salad dressing, or make your own with olive oil, balsamic vinegar or lemon juice (or a combination of both), and oregano. 3. Stir in some feta cheese crumbles or cut up cubes of feta. Top with some Calamata olives.
This too is best if it sits a little while to let the flavors blend.
