Spicy Corn
1 Tablespoon butter 1 small onion 1 red bell pepper 2 Roma or Plum tomatoes 1 lb frozen corn 1/2 teaspoon of cayenne pepper (1/4 tsp if you not a chili head) ½ cup of milk
Thinly dice onion and saute in butter until translucent then add thinly diced red bell pepper. Once bell pepper softens add thinly diced tomatoes. Add 1 lbs of frozen corn and bring temperature back up in pan. Once corn is warmed through add cayenne pepper to taste (less if you are not a chili head) and mix in throughly. Add ½ cup of milk and heat through. The milk adds a smoth silky rich flavor to the dish.

Oooh, we go to a potluck dinner at our township hall once a month... this sounds like something to take!
