My son wanted a carrot cake for his birthday and I wanted to make something sort of more nutritious than typical birthday cake, so I made this...
I used all Whole Wheat flour and omitted the nuts. We can get organic sugars now at our WalMart, so used that and eggs from cage free hens... oh, boy, this is really yummy! Oh, and I used a tube pan instead of an oblong pan.

15 servings 1 hour 15 min prep 1 cup vegetable oil 1 cup sugar 1 cup firmly packed dark brown sugar 4 eggs 1 cup all-purpose flour 1 cup whole-wheat flour 2 teaspoons cinnamon 2 teaspoons baking soda 1/4 teaspoon salt 2 cups grated carrots 1 (8 ounce) can crushed pineapple, drained,2 tblsps juice reserved 3/4 cup chopped walnuts cream cheese frosting (I made my own using cream cheese, powdered sugar and the leftover pineapple juice)
< Preheat oven to 350 degrees F. Butter 13 x 9 inch pyrex baking dish. Combine oil, sugars and eggs in mixing bowl. Sift together flours, cinnamon, soda and salt. Mix into liquid ingredients. Stir in carrots, pineapple with reserved juice and walnuts. Bake about 45 minutes or until tester comes out clean. Cool. Ice with Cream Cheese Frosting.

You know - that sounds soooo good! I love cream cheese frosting - but its gotta be the home made kind. The stuff in a can doesn't taste cream-cheesey enough! Oh, its making me hungry thinking about it...

Ohhh, I LOVE *things* in my cake! And carrot cake is a favorite!
Chris, have you tried the new 'white' whole wheat flour from King Arthur Flour? It's amazing! It's a new variety of wheat that, unlike previous varieties, lacks the vague bitterness of regular whole wheat. Not only does it make dynamite bread, but it's great for cookies, muffins, cakes, etc. It's a whole grain product, and has all the germ and bran (and nutrition!) intact. So far only King Arthur has it. I love it so much I buy it mail order from the company so I can get it organic, too. Whole Foods sells it also, so you might be able to get it there if you have one close by.
I'll make that cake on Saturday so the boys can have some on Sunday! How did you adjust your baking time for your tube pan?

I think it took 5 to 10 minutes more for the tube pan.
My son just called to say the cake was awesome!

I don't like ANYTHING in my cake, not fruit, not veggies. But this sounds really good. I'll bet my daughter would love it - I may make it for her 4th birthday.

Heh; I used carrot cake with cream cheese frosting for our wedding cake! I worked at a natural foods co-op, and we had our own bakery. Man, that was SO good!

You guys are making me drooool! A couple years ago I made a no-carb carrot cake from a box. It was so awful that when I put it out for the squirrels they wouldn't even touch it! From then on I decided if I'm going to make cake its going to be a real one with real carbs and real ingredients! I'm going to make this cake tomorrow with Ben - he's going to love it!

An example of the depth of my neuroses about fruit/veggies in cakes - my mom makes the best pineapple upside down cake EVER. I peel off the pineapple and eat the cake. Heck, I don't like fruit in ANYTHING. I love it by itself, and occasionally will eat a cobbler or pie, but I can't stand the texture or taste cooked. I really don't understand why I'm not skinny as a rail - I am the pickiest person EVER!

Maybe you are too picky! Could have the opposite effect on you, so you should start eating whatever and then you will be skinny. ;D
