Coyote, I'm down in the city (Seattle) for a few days. I need to call my grandmother anyway when I get back- I'll see if I can get some recipes from her or my mom. My grandmother can't cook to save her life, but she does have the recipes & techniques in her head. My mom, however, is a fabulous cook Oh man, did you get to have piergis somewhere? My grandmother's sister's recipe for them was the baiss for a restaurant chain and nationally distributed frozen pierogi!

Ah, Coyote, smoked paprika is a spanish thing You can find it from spice merchants here- you might have to mail order it. There's a place in Philadelphia, PA that has fabulous stuff, but they only do retail, I think. Penzey's has the best paprika I've found that you can mail-order. They have a website- a google search should turn it up. They've gone from marketing to the upscale crowd to pretty cheesy, but their spices are still of the same high quality. N*O can attest to it- I sent her there for paprika. I'm not sure if they have smoked or not... So, were you confused by Hungarian folks saying "Szia" when they met you? My friends who went to Budapest couldn't figure out why their maid would say "Hallo, Szia" all the time until I told them "szia"means Hello in hungarian! And "Csure" (I spelled that wrong, it's pronounced like sure") means beer! Oh, please tell me you didn't drink any Drayer! It's the WORST beer EVER!

Penzey's is by far the best. I used to buy my paprika from the german grocer here. But theirs was much more expensive nd not as fresh. It just tatsed different. Coyote, when you get the paprika, get sweet and hot and then mix it when you cock. I don't recall smoked paprika. I know smoked red peppers is a south west thing. Also, Penzey's cocoa is outstanding, Superman buys it by the pound. Vienna, Budapest.... ~~swoon, swoon~~

Just butting in to say that Penzey's is amazing- I think DH would have us go broke if I gave him free rein to that catalog
