I'd love to figure out how to make those sugared roasted almonds like what you get at fairs and such...
Anyone know how?

Well, here's one recipe, for honey roasted almonds - maybe it will work for ya.
2 cups whole almonds, skin on 1/4 cup sugar 1/2 tsp salt 2 Tbsp. honey 2 Tbsp. water 2 tsp. almond or vegetable oil
Directions:
Spread the almonds in a single layer in a shallow ungreased baking pan and place in cold oven. Bake at 350ยบ F, stirring occasionally, until the internal color of the nuts is tan to light brown, 12 to 15 minutes. (The nuts will continue roast a little more after they are removed from the oven.) Set the roasted almonds aside. Thoroughly mix the sugar and salt. Stir together the honey, water and oil in a medium-size saucepan and bring to a boil over medium heat. Stir in the roasted almonds and continue to cook and stir until all of the liquid has been absorbed by the nuts, about 5 minutes. Immediately transfer the almonds to a medium-size bowl into which some sugar mixture has been sprinkled. Sprinkle the remaining sugar mixture over the almonds and toss until they are evenly coated. Spread the almonds out on wax paper. When cool, store at room temperature in a tightly covered container or plastic bag for up to two weeks. Makes 2 cups.

Is this one of your favorite recipes? I thought I detected a hint of cinnamon in the almonds I bought at the midwest fair?

Oooh, I know *exactly* the nuts you're talking about! Doesn't the smell just about kill you? Yep, there's definitely a buncha cinnamon in there. I've got a recipe that will give you precisely the same nuts, and it's sooo easy, but I can't find the darn thing! I know it's basically pecans &/or almonds tossed in beaten egg whites, and then tossed in a cinnamon & sugar mix, and then baked, but I can't remember for how long at what temp...I'll look around for you, and I'll post it if I can find it. I really hope I can, because they're rather popular Christmas presents around here!

Ex Libris (lame little thing that she is) can't recall where she got the recipe. But I found this one at allrecipes.com, and it looks similar to what she described. You can use any kind of nuts. And YES they're good! INGREDIENTS 1 egg white 1 teaspoon ground cinnamon 1 cup sugar 3/4 teaspoon salt 2 tablespoons water 1 pound pecan halves DIRECTIONS Preheat oven to 250 degrees F (120 degrees C). Lightly butter a baking sheet. In a bowl, beat the egg white until foamy. Mix in cinnamon, sugar, salt, and water. Mix well. Stir in pecan halves, stirring until well coated. Spread on baking sheet. Bake in preheated oven for 1 hour, stirring every 15 minutes.

Gee, I don't WHERE I can find any pecan halves to try this - she says looking at the two huge gallon bags (about 4lbs each) still in the freezer from last harvest! This year's harvest will be starting in a month or so - better use those old ones up! LOL

WOW - Those are GOOD! I made some last night to take to a women's Bible Study, also took along MA's caramel dip and sliced apples - all were a hit!

I used MA's recipe for our New Years Eve party and everyone LOVED THEM! Well except me because I used walnut and almonds and not really crazy about either one lol.
