This might go good with Blind Dave's Mocha! This is what I took over to Acorn's house.
Streusel:
1/3 cup butter, softened 2/3 cup brown sugar 1/2 cup whole wheat flour 1 teaspoon cinnamon
Mix all ingredients together well, set aside
Cake:
2 cups whole wheat flour 1 cup sugar 3 teaspoons baking powder 1 1/4 cups milk 1/3 cup soft butter or cooking oil 1 egg
Grease and flour two round cake pans 8 or 9" rounds. Preheat oven to 350 F
Measure all cake ingredients into a large mixing bowl. Beat until moistened well. Scrape bowl and beat two more minutes.
spread 1/4 cup of the batter in the bottom of each cake pan. Sprinkle 14 of the struesel over the batter. Top with remaining batter and then struesel.
Bake about 25 minutes, until the cake springs back when touched.
If you like, you may glaze with powdered sugar mixed with a little milk or water. I didn't put any glaze on. It tasted good just like this.
Makes 2 cakes, 1 to eat and 1 to give away! Wonderful served warm.
variations: a little bit of chopped up apple, some raisins, or nuts would be a good addition to the batter.

I made this last night! I added a chopped up apple and a cup of blueberries/blackberries I had in the freezer, and boy is it good! Even my boys liked it -- they don't usually eat cake, only cookies.

You know, I've been using a new type of whole wheat flour called White Whole Wheat. It's a different strain of wheat, and you get all the whole grain goodness in the fiber, vitamins, and germ, but without the bitterness you often find in regular whole wheat. The color is a sort of light tan, and the flavor is remarkable! It's made by King Arthur, and you can get it at Whole Foods, among other places. I've found it to be really good for cakes, biscuits, pancakes and scones, as well as regular bread. I bet it'd be great with this recipe! Now I need some with some Blind Dave's Mocha.

It was pretty good with regular whole wheat! And what I liked was unlike some whole wheat recipes, it wasn't dry and crumbly! I'll bet the addition of fruit ws yummmmmy!

Okay, I made this with the White Whole Wheat flour, and it was absolutely delicious! I had ours plain, and took the other one to Heather's house and put icing on that one. (Her hubby's of a mind that there's no such thing as too much icing. ) We really enjoyed it; thanks, Chris! Oh, and I liked it with plain coffee or Earl Grey tea.

I made a different version over the weekend. I added shredded carrots and raisins to the batter.
while that was baking, I made a glaze with crushed pinapple (with juice), brown sugar and butter and let it boil down a few minutes. I poured it over the cakes when they were out of the oven.
Yummy!

Sounds really good! I'm thinking of chopped apple and raisins next time, or maybe some of my rum soaked currants and nuts.
