I love this stuff and so does my dad! I've made several for him . . . my step-sister, though, also loves it and always "helps" him eat it.
About 1/4 lb to 1/3 lb deli roast beef, chipped (I prefer Publix bottom round, though top round will do in a pinch. Don't get the cajun-seasoned or other strongly seasoned type of beef unless you want to branch out and try something new)
One small onion, minced
2 8-oz packages of cream cheese (believe it or not the Publix cream cheese tastes better in this recipe than even Philadelphia Cream Cheese!).
Allow cream cheese to soften for easier mixing. Place in mixing bowl (glass or stainless is best). Add minced onion and chipped beef (often the deli doesn't chip the beef small enough so you'll have to tear it into smaller pieces as you add it to the bowl). Mix thoroughly (I use food prep gloves because it will make your hands quite messy!) and form into ball. Place on plate, cover and refrigerate overnight for best results. Serve with Ritz crackers and watch it disappear!
