This recipe is something that can all be in your cabinet and ready to be whipped up if unexpected company comes. It is fast and easy and a big time cheater recipe. All the same it is Good! The broth and chicken can be adjusted to the size pot you have and the amount of people you are feeding. Remember to allow room in your pot for the dumplings to rise. Enjoy.
Quick Chicken & Dumplings
2 cans chicken broth
2 large cans chunked chicken
2 cups biscuit mix
2/3 cup milk
chicken flavored bouillon cube
pinch of dried ground sage
black pepper
In large pot(need one that has a good fitting lid) empty your broth and cans of chicken juices and all and bring to a boil. If needed dissolve bouillon cube in water and add that as well to make enough stock. While the mixture is coming to a boil mix together the biscuit mix and the milk. Just mix by hand til blended don’t over mix, the mixture should be somewhat lumpy. Drop by teaspoonfuls into boiling broth mixture. You can experiment to see what size dumpling you like. Add the sage and black pepper to taste. Lower the heat and simmer the dumplings covered for about 10 to 15 minutes. Serve.
