Well my hubby when he was on the Atkins diet had cravings for pizza so I came up with this, its yummy but messy and not a finger food like real pizza is. Jar of spaghetti sauce or pizza sauce without sugar sliced pepperoni package mushrooms bell pepper sliced up grated mozzarella cheese-2 cups sliced olives A 12 by 24 inch pan Take a bit of the sauce and layer it on the bottom, not too deep. Then add layer of pepperoni, mushrooms, bell peppers, sliced olives and cheese. layer again until you run out of ingredients. Add the olives on the top over the top of the cheese. Bake at about 400 degrees for gosh I think it was 30 minutes or until its hot all the way through. let it cool a bit. Slice through all layers and put on plate. It will be greasy and really fattening but it was allowed on his diet and it did satisfy his pizza craving. If you let it cool overnight cold you can eat it with your hands but its not so good. LOL BTW you can substitute other ingredients that you like on your pizza. Onions would be good, as would ground beef , salami, ect...

sounds good! I usually eat the topping off the crust anyway!

I have an idea - for a "crust", could you use a large mushroom cap? Kinda like a pizza stuffed mushroom? I dunno about the carbs, but it could go back to being a finger food :-)

Another way to do it is to use portobellos. Lace with your pizza sauce, toppings, and cheese. Heck, I'd rather have that than crust any day!
