GOOD CAKES!
1. Honey Oatmeal Cake
1 cup whole oatmeal
1 stick (1/2 cup) butter
1 ¼ cups boiling water
1 ½ cup honey
1 teaspoon vanilla
2 eggs
1 ¾ cups whole wheat flour
1 teaspoon baking soda
¾ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
Preheat oven to 350. Grease and flour 9 x 13” cake pan.
Put oats, butter and boiling water in a large bowl and let set for 20 minutes. Add honey, vanilla and eggs and beat well. Stir in rest of ingredients and pour into prepared pan. Bake about 40 minutes or until cake springs back lightly when touched.
Can be served plain, or with a light dusting of powdered sugar. I like it with an icing made of cream cheese and honey.
2. Fresh Apple Cake
Preheat oven to 350 F. Grease and flour a 9 x 13” cake pan.
Place in large mixing bowl: 3 cups of peeled, cored, diced raw apple. Sprinkle 1 tablespoon lemon juice over to keep from darkening. Toss lightly.
Beat together in a separate bowl and pour over apples: 1 cup cooking oil and 2 eggs.
Sift together and stir into apple mixture:
2 cups sugar
1 cup unbleached white flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon cinnamon
½ teaspoon cloves
Add last without sifting:
1 cup whole wheat flour
1 cup raw bran flakes
Stir all ingredients well. Pour into pan and bake for 1 hour. Serve warm with whipped cream or vanilla ice cream.
3. Apple Butter Cake
Preheat oven to 350F. Grease and flour a 9 x 13” cake pan
2 ½ cups flour
1 ½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
½ cup butter or margarine
1 cup brown sugar
4 eggs
¾ cup buttermilk or soured milk
1 ½ cups apple butter
Sift flour with baking soda and spices. Set aside. In a large bowl, mix at high speed the butter, sugar and eggs. At low speed, beat in flour alternately with milk, beginning and ending with the flour. Stir in apple butter until it is mixed well. Pour batter into pan. Bake 50 minutes to 1 hour or until done.
Nice with a sour cream icing or a caramel broiled topping.
4. Raspberry Cake
Preheat oven to 350F. Grease and flour 9 x 13” cake pan
2 cups flour
½ teaspoon salt
1 ½ teaspoons baking powder
½ cup butter
¾ cup honey or 1 cup sugar
1 egg
1 teaspoon vanilla
1 cup milk
1 pint fresh raspberries
Sift together dry ingredients and set aside. Cream butter and honey until light and fluffy. Add egg and mix well. Add vanilla to milk and add this alternately with the flour mixture. Mix only enough to make a smooth batter. LIGHTLY stir in raspberries. If desired, sprinkle a little brown or turbinado sugar on top of batter before baking, if you are going to forgo icing. Bake about 35 to 40 min or until done.
