Fruit Clafouti
¼ cup mild flavored honey 2 Tbsp Kirsch or other fruit liqueur 4 egg whites 2 eggs ¼ cup sugar 1 tsp vanilla extract 1 cup all purpose flour 1 ½ cup plain Yoghourt or Kefir pinch of salt 1 – 1 ½ lbs fresh fruit (blueberries, or Cherries, blackberries, sliced peaches, apricots or sliced plums)
Preheat oven to 400F Lightly butter 10 ½ inch ceramic tart pan or baking dish. Beat together eggs, egg whites, honey, fruit liqueur, sugar and vanilla. Beat until smooth. Slowly add flour. Mix in until flour is incorporated in batter.

Mix in until flour is incorporated in batter. Add yoghourt and salt – mix well. Arrange fruit on baking dish Pour batter over fruit. Bake for 30-45 minutes or until top is browned. Serve warm or at room temperature.
