creamiest home made macaroni and cheese ever. It's two days til payday and I'm rummaging in the cupboards and fridge for stuff to make dinner with. I didn't have enough milk for the white sauce for the mac and cheese.
I usually cook the pasta and drain it, make a white sauce and put in a little dry mustard and some good cheese, then add the pasta back in.
Well, I looked for milk substitutes and found a half a carton of cottage cheese. Put that in, and melted it and wow, a very nice and smooth and creamy cheese sauce!
My toughest food critic, John, said it was the best!

That is a great idea! My mom makes hers crunchy on top by using crackers sprinkled on top-yummy. Great now I want Mac & cheese.

Mmmmmmm! Mac and cheese are one of my favorite things to eat! No wonder I'm so fat! ;D I've been making it with the low carb pasta, but all that cheese that I put in it is bad news on the South beach diet, plus the pasta tastes to good to be low carb so I'm scared to use it! It's Dreamfields brand and taste damded good, so it can't really be low carb! Dang Chris, now I want Mac and Cheese! Good thing that I'm at work tonight and not home were the groceries are!

Here's an easy cheater way to make mac n cheese from scratch without a lot of work. Saute about a half a finely chopped onion in some olive oil; when it's clear, sprinkle in some chopped garlic and stir it a bit until the garlic starts getting a little soft. Then throw in a cup of sour cream, and a pound of grated cheese. Stir until the cheese is melted, and then dump in a half pound of cooked pasta. Stir. If you can't eat it right then, you can dump it into a buttered bowl and top with breadcrumbs dotted with butter, and heat it in the oven later for half an hour or so. This is soooo good, and so easy it's about a crime! We have a thin budget this month, too. That's the way it is every year in the first quarter, plus this year we have some medical bills. *sigh* What're ya gonna do? But it feels good to make it work, doesn't it?

Oh yea, I've been in tighter spots before. This isn't too bad, LOL...
My DH marvels sometimes at the way I can go to an empty fridge, freezer or cupboard and put together a decent dinner!
When we were really poor, when my boys were growing up, they used to call me "The Queen of Always Save." AS is the generic foods name around here. Everything in cans or boxes at our house came in a yellow Always Save package. tee hee...

Ministries? It's www.angelfoodministries.com. For twenty five dollars you buy some wonderful food. Enough to last your family a week, I would guess. And it's steak and chicken and delicious food. It's for everybody, not just needy persons. It's designed to help people make a habit of coming to church. (At least, that's how I understand it). You don't need to worry about taking food from more needy people, because you order what you need. Good luck.

Had an interesting experience this week. The Schwan's man stopped by last Wednesday and we got our usual order.
Thursday I drove up to the city and when I got home, I noticed a cardboard box full of boxes. I hadn' t noticed it when I left. It was full of Schwan's packaged food! About $150 worth.
I don't know of any good samaritans who would leave that amount of food on our doorstep and it was too coincidental that the Schwan's man had been there the night before. I figured he must have taken that box out of his truck to find something we ordered and forgot to put it back in. i just didn't notice it when I left home.
The food was still frozen, so I put it in my deep freeze and emailed Schwan's corporate. I figure it had to be a mistake and I know those delivery drivers don't make much money on the items they sell. He couldn't possibly afford to leave that much here! It must have been an accident.
He hasn't called us back, but the corporate office did and said they'd tell him to pick it up on his next visit.
It sure would have been nice to keep that stuff, but I just couldn't in good conscience....

Actually, I'm kind of surprised they'd take it back. Most places have rules about what they'll accept back due to product tampering issues. When I was working at Mickey D's, long before the Tylenol poisonings, once even a packet of ketchup went over the counter, it couldn't go back. We'd have to throw it away.
They should have let you keep it. Oh well. You did the right thing!

WEll, I don't suppose they'll try to resell it, but I imagine the driver has to account for it somehow.... ....
He doesn't come for another week, so maybe he'll let us keep somethingl!
